It's been a while since I played the Snes port, I'll likely play that as well as the PS1, and get them on Lvlup.
Snes looks and sounds great but I remember it feels like there's no way to avoid enemy fire, and it instead gives you tons of continues to make up for it. As where Genesis is simular but i felt more in control and gave me the better impression.
PS1 and Saturn are closest to the arcade, though Saturn some reason has some slowdown.
They are both still heavily cut back from the arcade, even sound wise. But great fun. I wish T2 Arcade made it to PS1.

Genesis has a better gameplay feel to it than the SNES version, I'll say that much.
I actually have the PS1 disc, been years. so I might be recording that soon :)
Thx

Slightly slower pacing in the Genesis version looks more playable than arcade/PS1.
